Cheesy Spicy Chicken Enchiladas

- 3-4 chicken breasts shopping list
- 3 T. butter shopping list
- 2 T. flour shopping list
- 3 c. hot water; divided shopping list
- 2 cubes chicken bouillon shopping list
- 2 c. Monterey Jack cheese; shreddeed shopping list
- 2 fresh jalapenos; finely chopped shopping list
- 1 T. dry Mexican seasonings (I use Mrs. Dash Fiesta Lime) shopping list
- salsa; to taste shopping list
- flour tortillas shopping list
- colby Jack cheese to taste; to cover the top before baking shopping list
How to make it
- Cook chicken breasts. I baked mine with some of the Mrs. Dash Fiesta Lime seasonings sprinkled on top. Shred when cooked.
- Meanwhile, melt butter in a skillet. Mix in flour and chicken bouillon cubes. Slowly add water until all 3 cups have been used. Keep stirring to keep the sauce thick. Add the Mexican seasonings, jalapeno, and shredded Jack cheese. Stir to keep it thickening. Add salsa. I used enough to give the sauce a kick, but not enough that it turned pink in color. Maybe a cup.
- Mix half the sauce into the chicken. Roll into tortillas and place seam down in a casserole dish. Pour remaining sauce on top. Then add more shredded cheese on top of that. I used Colby Jack here, but you can stick with Monterey Jack if preferred.
- Serve with more salsa, sour cream, lettuce, etc.
