Mas Pork Chow Mein Recipe
It's hard to find a Chinese restaurant I like, so I experimented until I came up with this recipe. For me, it's the best I ever had!!

Ingredients
  • 2 large onions thinly sliced
  • 1/2 cup finely chopped carrot
  • 1 large clove of garlic, minced
  • 1-2 tablespoons garlic, minced
  • 1/2 pound mushrooms, sliced(any kind)
  • 2 cups spinach or bok choy, chopped
  • 2 cups chicken broth
  • 4-6 tablespoons soy sauce
  • 4-5 tablespoons cornstarch
  • 6 tablespoons oyster sauce
  • 2 pounds cooked pork, chopped(I use leftover pork roast)
  • 16 ounces sliced canned water chestnuts
  • salt and pepper, to taste

Directions
  1. Saute onions and garlic in small amount of butter or oil.
  2. When just beginning to brown slightly, add 1 tablespoon of sugar, if desired and garlic and mushrooms and cook 3 minutes
  3. Add spinach and cook 1 minute
  4. Add chicken broth, bring to a boil, then reduce to a simmer
  5. Mix soy sauce, oyster sauce and cornstarch together then add to broth mixture, stirring and simmering until thickened
  6. Add pork and water chestnuts and heat through.
  7. I serve this with rice and crispy chinese noodles.

I tried this... with left over pork... Was wonderful! I used Swiss Chard!
