How to make it

  • Preheat oven to 425 degrees F Place yogurt in a small and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.)
  • In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
  • Rinse chicken breasts and pat dry.
  • Dip each breast in the lemon / yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
  • Place coated chicken on an oiled rack placed in a cookie sheet or baking pan and top with melted butter.
  • Sprinkle with chopped parsley and bake in the preheated oven for 30 to 45 minutes or until you are satisfied chicken is cooked.

    We enjoyed this chicken dish, i had to change a couple of things(lactose) i used lactose free vanilla yogurt(all i had) and lactose, gluten free coarse oatmeal which i ground up to make it less coarse.I used 4 cloves of fresh garlic, but also added some fresh rosemary.I used Earth Balance in place of butter. The chicken turned out very moist and tender, thank you Mikey for the recipe..Jan.7/2016. I give it 5 stars*****

    We really, really enjoyed this chicken. I used 4 cloves of fresh garlic and Italian seasoned bread crumbs. This method produced extremely moist chicken breasts with tons of flavour. Thanks for sharing, Mikey.
