Another Roast Potato Recipe

- 2 very large russet potatoes shopping list
- 1 tbs olive oil, or less shopping list
- a few twists of pepper shopping list
- 1/4 tsp paprika shopping list
How to make it
- Peel, wash and cut potatoes in half, lengthwise
- Score the flat part of the potato in a diamond pattern, about 1/2 inch deep. Be careful not to cut all the way through.
- Place the potatoes, flat side down, on a parchment lined baking sheet.
- Drizzle oil over potatoes.
- Sprinkle paprika and pepper over potatoes.
- Bake for 30 minutes, 350ยบ, flip and cook for another 30 minutes.
- *These are really crunchy. Cook for a shorter period of time if potatoes are smaller.
- **Drizzle with a little more oil if they look dry when you flip them.
- Update: cook for 1 hour @ 400

I used two russet potatoes and they were pretty big. I think mine could have used another 10 minutes. I think next time I would sprinkle the pepper and paprika again when I flipped them. Put them in a thread in IMI 5/22/16
