Ingredients

How to make it

  • Melt butter in a med. pan.
  • Add orzo and pasta and stir until orzo is light brown, about 5 minutes
  • Add onion and stir until onion is translucent, if orzo/pasta starts to stick add 1 tsp of butter.
  • Remove pan from the burner and allow to cool, if you add the broth too soon it will boil off.
  • When cooled slightly, add the chicken broth, parsley and seasoning.
  • Extra seasoning isn't necessary but you can season it to compliment your other dishes.
  • Bring to a boil and lower temp to med. low. Cover and simmer for 20-25 minutes.
  • Let rest for 5 minutes , fluff with a fork.
  • Add almonds and serve.

    Yummy! I did have to add a bit more butter when cooking the onions. I don't like mushrooms so I added some peas during the last five minutes of cooking and then they sat for the five minutes rest which was enough to cook them. I simmered it all for a total of 25 minutes. I went shopping without my glasses and ended up with sliced almonds instead of slivered. :-P I think my result could have used a tad of salt as I used less sodium broth. Added to IMI on 1/24/16.
