What do you do with the third egg yolk? Is it for the top of the dough or do you add it eventually to the cheese mixture?

I... Never realized I left that out. Yes, you coat the top of the dish with the third egg yolk. It makes it a pretty golden color, and gives a bit of extra flavor to the pie!
