Bruschetta Pomodoro Recipe
This is a wonderfully flavorful recipe for a bruschetta which combines the flavors of tomatoes with olives and capers! Great on toasted baguette slices!

Ingredients
  • 2 cups minced Roma tomatoes
  • 1 1/2 teaspoons capers
  • 2 tablespoons chopped kalamata olives
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon balsamic vinegar
  • 1/8 teaspoon pepper

Directions
  1. Combine all the ingredients; cover and let stand 30 minutes. Drain the tomato mixture.
