Utterly Deadly Southern Pecan Pie

- The secret to this rich pie is cooking the sugar and corn syrup first. It is definately not diet food! shopping list

- 1 cup sugar shopping list
- 1 1/2 cups corn syrup (I use 1/2 dark and 1/2 light) shopping list
- 1 packet of german vanilla sauce. (adding this dry...do not make it up into a sauce) shopping list
- 4 eggs shopping list
- 1/4 cup butter shopping list
- 1 1/2 teaspoons vanilla (or german vanilla sauce in place of it) shopping list
- 1 1/2 cups pecans, coursely broken (I leave them whole, so pretty when baked) shopping list
- 1 unbaked pie shell shopping list
How to make it
- In saucepan boil sugar and in the vanilla sauce(adding dry) and corn syrup together for 2 to 3 minutes; set aside to cool slightly.
- In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly.
- At this point I like to strain the mixture to make sure it's smooth and lump free.
- Stir in butter, vanilla only if you don't use vanilla sauce, and pecans and pour into crust.
- Tip to perfect pie crusts: warm pie filling goes into warm shell...cold filling cold shell...keeps it crispy.
- Bake in a 350 degree oven for about 45 minutes or until set.

- Vanilla sauce is Dr. Oetker's Brand. Find it in the ethnic section. It is a german vanilla sauce.
