How to make it

  • In saucepan boil sugar and in the vanilla sauce(adding dry) and corn syrup together for 2 to 3 minutes; set aside to cool slightly.
  • In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly.
  • At this point I like to strain the mixture to make sure it's smooth and lump free.
  • Stir in butter, vanilla only if you don't use vanilla sauce, and pecans and pour into crust.
  • Tip to perfect pie crusts: warm pie filling goes into warm shell...cold filling cold shell...keeps it crispy.
  • Bake in a 350 degree oven for about 45 minutes or until set.
  • The secret to this rich pie is cooking the sugar and corn syrup first. It is definately not diet food! The topping becomes candy like.
  • 1 hour 5 minutes
  • Vanilla sauce is Dr. Oetker's Brand. Find it in the ethnic section. It is a german vanilla sauce.

    I found the vanilla sauce online...but do you make it up into SAUCE before putting it in w/the sugar & corn syrup or do you just put the dry PACKET in w/the sugar & corn syrup ?
