Ingredients
  • The secret to this rich pie is cooking the sugar and corn syrup first. It is definately not diet food!
  • 1 hour 5 minutes
  • 1 cup sugar
  • 1 1/2 cups corn syrup (I use 1/2 dark and 1/2 light)
  • 1 packet of german vanilla sauce. (adding this dry...do not make it up into a sauce)
  • 4 eggs
  • 1/4 cup butter
  • 1 1/2 teaspoons vanilla (or german vanilla sauce in place of it)
  • 1 1/2 cups pecans, coursely broken (I leave them whole, so pretty when baked)
  • 1 unbaked pie shell

Directions
  1. In saucepan boil sugar and in the vanilla sauce(adding dry) and corn syrup together for 2 to 3 minutes; set aside to cool slightly.
  2. In large bowl beat eggs lightly and very slowly pour the syrup mixture into the eggs, stirring constantly.
  3. At this point I like to strain the mixture to make sure it's smooth and lump free.
  4. Stir in butter, vanilla only if you don't use vanilla sauce, and pecans and pour into crust.
  5. Tip to perfect pie crusts: warm pie filling goes into warm shell...cold filling cold shell...keeps it crispy.
  6. Bake in a 350 degree oven for about 45 minutes or until set.
  7. The secret to this rich pie is cooking the sugar and corn syrup first. It is definately not diet food! The topping becomes candy like.
  8. 1 hour 5 minutes
  9. Vanilla sauce is Dr. Oetker's Brand. Find it in the ethnic section. It is a german vanilla sauce.

This pie sounds fantastic..

Where can I find vanilla sauce? I'm a little leary about trying vanilla pudding.

I found the vanilla sauce online...but do you make it up into SAUCE before putting it in w/the sugar & corn syrup or do you just put the dry PACKET in w/the sugar & corn syrup ?

Oh man, I'm glad I saw your note on Dixiejet's page because I missed this one...sounds FANTASTIC!

This sounds really good, I'll have to see if I can find the Vanilla Sauce. Thanks for the great post.
