Super-garlicky baked navy beans, cooked in white wine instead of the traditional tomato sauce. Don't worry, the garlic mellows during cooking.

Ingredients
  • 1 lb dried navy beans, soaked 24 hours and drained
  • 1 bouquet garni
  • 12 garlic cloves, peeled and halved.
  • 2 tbsp fresh parsley
  • 2 cups dry white wine
  • 1 tbsp fresh basil
  • ½ tsp salt
  • 1 ½ tsp black pepper

Directions
  1. Add beans to a stockpot. Cover completely with fresh water.
  2. Add bouquet garni.
  3. Cook over medium 1 ½ hours, uncovered.
  4. Preheat oven to 300F.
  5. Drain beans, remove bouquet garni and turn into a casserole dish.
  6. Add garlic, parsley, wine, basil, salt and pepper.
  7. Cover with water, bring back to a boil.
  8. Transfer casserole to the hot oven. Cook 1 hour.
  9. Remove cover and cook 30 minutes more.
