Puffy French Toast

- 1 cup milk shopping list
- 2 eggs shopping list
- 1½ cups pancake mix shopping list
- enough shortening or oil for pan frying (about ¼ cup) shopping list
- 8 day-old slices of bread (I use French bread, cut about 3/4" thick) shopping list
How to make it
- Mix together milk, eggs and pancake mix.
- Heat shortening or oil in a skillet until hot (375 degrees).
- If using regular bread slice, cut each slice in half diagonally. This is not necessary if you use French bread slices.
- Dip each slice into the batter and place in hot skillet.
- Sauté bread slices until golden brown and puffy, about 2 minutes per side.
- Watch closely, as they can burn easily.
- Drain well on paper toweling.
- Serve with powdered sugar sprinkled on top, or with syrup or jam.
