Impossible Pumpkin Pie Recipe
I don't like pie crust and started making this years ago! It's now a staple at our Thanksgiving dinner!

Ingredients
  • 2 small cans or 1 large can Pumpkin Pie Mix - NOT the 100% pumpkin (I use Libby's)
  • 1 C sugar
  • 1 C Bisquick Baking Mix
  • 1 - 5 oz Can Evaporated Milk
  • 2 Eggs

Directions
  1. Mix all ingredients together in a large bowl until well blended.
  2. Pour into a sprayed 9x13 baking dish or 2-3 sprayed pie plates.*
  3. Bake in preheated 425°F oven for 15 minutes. Reduce temperature to 350°; bake 50 to 60 minutes or until knife inserted near center comes out clean.
  4. *For shallow pies, bake in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 40 minutes or until pies test done.
  5. Pie will form it's own thin pumpkin crust on the bottom and edges!!
  6. Cool and serve with whip cream.
  7. YUMMY!!

Angel, I can't tell you how great these are. I was at a meeting. This CHEF Lol who was going to culinary school brought in the cutest little heart shaped pumpin pies. Topped with eggnog cream. LOL IT WAS THIS RECIPE. They were adoreable and bite size. Cream was only made with vanilla pudding and eggnog mix in kool whip. pipped on the center of each heart. Thanks for posting this. I was determined to get the recipe and she was so embarrased to share it, lol.


Wow, this really makes it's own crust on the bottom and sides but not on top? I will definitely have to give this one a try as I have never mastered a home made crust and even with the store bought crust I hate having to put the aluminum foil around the edges so they don't get too brown. I will be making this one. Thanks Angel

I must say I have never made anything pumpkin, but this sounds great if I knew what pumpkin tastes like. (well I am English! )
I must admit I have aways thrown the flesh away when making pumpkin lanterns. could I use this?

Hey Angel is that 1-5 oz. can of evap. milk or 15 oz can? I am planning on making this pretty soon.

Alterations


Pour into little miniture heart shape pans or any shape you wish. Sever with a small dallop of eggnog mousse on top, lol it is instant vanilla pudding beat with eggnog and fold in kool whip and pipe.
