Tomatoey Mac - un - Cheese

- 2 onions, diced shopping list
- 2 to 3 lbs. tomatoes, chopped shopping list
- 1 lb. whole wheat macaroni shopping list
- 3 ½ cups cooked, drained cannellini beans shopping list
- 1 cup nutritional yeast shopping list
- ½ cup lemon juice shopping list
- 1 tbsp chili powder shopping list
- 1 tsp garlic powder shopping list
How to make it
- Preheat oven to 350 degrees F.
- Place onions in a large, microwave-safe covered baking dish.
- Cover and cook 5 minutes on High.
- Add tomatoes to onions.
- Cover the baking dish and cook 3 minutes.
- Cook pasta until very al dente.
- Add the beans, nutritional yeast, lemon juice, chili powder and garlic to a blender.
- Cover and run the blender at high speed until the ingredients are creamy. Combine the cooked and drained pasta and the bean sauce with the onions and tomatoes in the covered dish, and mix well.
- Cover and bake for about 10-15 minutes.
