How to make it

  • Preheat oven to 350 degrees F.
  • Place onions in a large, microwave-safe covered baking dish.
  • Cover and cook 5 minutes on High.
  • Add tomatoes to onions.
  • Cover the baking dish and cook 3 minutes.
  • Cook pasta until very al dente.
  • Add the beans, nutritional yeast, lemon juice, chili powder and garlic to a blender.
  • Cover and run the blender at high speed until the ingredients are creamy. Combine the cooked and drained pasta and the bean sauce with the onions and tomatoes in the covered dish, and mix well.
  • Cover and bake for about 10-15 minutes.

    Oh, this sounds really interesting. I've tried quite a few vegan mac and "cheeze" recipes, but none with beans as a base, I definitely will try this!

    By the way I buy it either at Bulk Barn or my local health food store, though I've seen Bob's Red Mill brand at the grocery too.

    Looks good. I love pasta, but due to diabetes have to be very careful with portion control, etc. Where do you buy the nutritional yeast -- I've never seen it, but am fairly new to health food stores, etc.
