Magnificent Morning Breakfast Pie Recipe

Ingredients

1 pound uncooked shrimp, peeled, deveined and chopped

2 tablespoons butter

1 1/2 cups (6 oz) shreeded Swiss cheese

1 unbaked (10 inch) deep dish pie shell

4 eggs

1 cup light cream

2 teaspoons chopped onion

1/4 cup chopped red bell pepper

1/4 cup chopped green bell pepper

1/4 cup chopped yellow bell pepper (optional)

Directions

Saute the shrimp in the butter in a skillet for two minutes. Remove the shrimp to a bowl with a slotted spoon. Add the cheese and toss to mix well. Prick the pie shell with a fork. Spoon the shrimp mixture into the pie shell. Beat the eggs, cream, onion and bell peppers in a bowl. Pour over the shrimp mixture.

Bake at 375 degrees for 40 to 45 minutes or until set.
