Ingredients
  • 4 T Butter, soft
  • 3/4 C Granulated Sugar
  • 3/4 cup Brown Sugar
  • 2 Eggs
  • 4 cups Bananas, very ripe (about 10) Mashed
  • 4 cups Flour
  • 7 teaspoons Baking Powder
  • 2 teaspoons Salt
  • 1 cup Nuts Chopped and toasted

Directions
  1. Beat butter and sugars until smooth. Add eggs and beat in. Then add bananas a cup at a time. Set aside. Sift or stir dry ingredients together and add to sugar mixture 1 cup at a time. Add nuts last. I like to use walnuts, but pecans are good, also. Pour into 2 9-inch bread pans that have been sprayed with Pam. Bake at 350 degrees for an hour (maybe longer, but when crack appears on top, they are most likely getting close to being done.)

I love this recipe because it uses so many bananas. Since bananas have gotten so expensive I often buy the cheap bag o'bananas they sell at my local grocery. But since the bag contains about 2 dozen bananas and they are pretty ripe to begin with, it's hard to use them all up. I hate to throw them away and since most recipes only call for 3 or 4 mashed banana this is wonderful!


Hey food devil.....can't go wrong with this bread. I guess you know that overripe bananas can be frozen in the skin and thawed out when you need to make bread. I also buy them at the supermarket and put them in the freezer.


Question...does VERY ripe mean the skin is all brown and spotty, where they look like they are almost rotten?
