Double-Quick Dinner Rolls Recipe
No need to knead! This recipe gives you piping-hot yeast rolls without the workof having to knead the dough.

Ingredients
  • 2 1/4 cups all-purpose flour
  • 2 Tbs. sugar
  • 1 tps. salt
  • 1 package regular or quick active dry yeast
  • 1 cup very warm water (120F to 130F)
  • 2 Tbs. shortening
  • 1 egg

Directions
  1. Mix 1 1/4 cups of the flour, sugar, salt and yeast in large bowl. Add water, shortening and egg; beat with spoon until smooth. Stir in remaining flour until smooth. Scrape batter from side of bowl. Cover and let rise in a warm place about 30 minutes or until double.
  2. Grease 12 regular-size muffin cups. Stir down batter by beating about 25 strokes. Spoon into muffin cups. Let rise 20 to 30 minutes or until batter rounds over tops of cups.
  3. Heat oven to 400 F. Bake 15 to 20 minutes or until golden brown.
  4. Makes 1 dozen rolls

My Grandmother baked every kind of roll and bread that you can name...often making her own starter.

I agree about the 10 on these rolls. I actually signed up to let you know how good these were. I made a slow cooking vegetable chicken soup with these and had to reprimand my husband for eating his 3rd one before he had any soup...soup was too hot...yeah right. Really fast, really easy and really amazing! My new roll recipe.

I realize this was posted quite some time ago. But, I just had come back to say this is a great recipe! I've made it multiple times now and the results are great. I've used butter, shortening, and a mixture of both. While the taste is a bit different with each, the result is always great! Try it and stick to the recipe and instructions. Two mistakes I've made are 1)proofing the yeast first, and 2) leaving the salt out until later because I was afraid it would kill the yeast. Just use fresh yeast and trust the recipe! It works! Thanks for posting such a great recipe. SIX forks!
