How to make it

  • Preheat oven to 350ºF.
  • Combine egg and butter. Gradually add sugar into egg mixture and beat until light. Add extract.
  • In a separate bowl sift together baking powder, cake flour, salt. Add the flour to the egg mixture alternately with milk. Beat well. Fold in the berries and pour into an 8-inch cake pan.
  • Bake about 35-40 minutes or until done.
  • (I do not recommend substituting the sugar with splenda, because the cake turns out too flat. I have never used the splenda/sugar mix, so I can't comment on the results from using that).

    I love cake. I also love blueberries. I'm thinking about giving this recipe a try. Huckleberries sound good in a "country" kind of way. Where does one find them? Hmmm...
    I bet this would be good with blueberry coffee. I'll give it a whirl.

    This sounds wonderful! My husband & his mom loooove anything with Huckleberries in it. I wish we had them up here. Thanks for posting, I bookmarked it just incase we find any. But will still try it with the blueberries.
