Cheddar Jack Fritters Recipe
These are so incredible. I love cheese and I love fritters, when I came across this recipe at an estate sale a few years ago I made it and it is now a mainstay in my home especilly when we have fried catfish. Yummy

Ingredients
  • 4 ears of corn kernels removed and coarsely chopped
  • 1 cup sharp Cheddar cheese shredded
  • 1 cup pepper Jack cheese shredded
  • 1/2 cup white Cheddar cheese shredded
  • 3 eggs slightly beaten
  • 1/2 cup buttermilk
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 4 tablespoons butter

Directions
  1. Combine ingredients to form batter.
  2. Heat a large non-stick skillet over medium heat.
  3. Add 1 tablespoon butter to pan per batch.
  4. Drop 1/4 cup measures of batter into skillet.
  5. Cook 3 minutes per side.

When I tried to fry my own cheese sticks, they didn't turn out so well, but this recipe seems like I'll have better luck. Love cheese, in love with cheese. I used to ask for it for Christmas.


Me too. There are very few cheeses I don't like. I can't eat it plain, on burgers, melted over just about anything. Yummy.
