Reelin And Rockin Rellenos

- 4 4-ounce cans diced mild or hot green chili peppers, drained shopping list
- 1 cup shredded sharp cheddar cheese (4 ounces) shopping list
- 1 cup shredded monterey jack cheese (4 ounces) shopping list
- 2 cups evaporated milk shopping list
- 4 eggs shopping list
- 1/3 cup all-purpose flour shopping list
- 1 teaspoon salt shopping list
- 2 avocados, seeded, peeled, and sliced shopping list
How to make it
- Preheat oven to 350. In a greased baking dish, layer chili peppers, cheddar cheese, and Monterey Jack cheese. In a blender container, combine evaporated milk, eggs, flour, and salt. Cover and blend until well combined. Pour over chili peppers and cheese. bake about 45 minutes or until a knife inserted near center comes out clean. Before serving, top with avocado slices. Makes 6-8 servings.
