How to make it

  • Preheat oven to 350º F. Grease 9" pie plate.
  • Stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center
  • comes out clean. Cover and refrigerate any remaining pie.
  • Makes:8 servings.

    For this and the crustless pumpkin pie one can substitute 1/2 cup flour plus 3/4 teaspoon baking powder for the bisquick. I have made both and they are good.

    Great and easy, with 6g of protein will be great for breakfast as well. I used original bisquick but wonder if you can use the reduced fat bisquick.

    Actually it is just 'Bisquick', I really thought it was all over the world.. We use Bisquick for biscuits, pancakes etc.. just a great shortcut mix for baking goodies... happy cooking..

    Hey shirleyoma,
    I've been MIA for a few days, thanks for this posting!! My grandmother makes the best coconut cake, just melts in your mouth, being diabetic as well though, I couldn't eat that much, this sounds wonderful!! I've been doing the Splenda for awhile now but never even thought about coconut....don't know why, but thanks again!!!

    I've always heard this pie is so simple but really good. My neighbor makes it all the time, she was just talking about how the crust knows just where to go everytime she makes it. LOL Guess I'll have to give it a try :)
