Ingredients
  • 1/2 cup Original Bisquick® mix
  • 2 cups milk
  • 1 cup flaked or shredded coconut
  • 3/4 cup Splenda or Sugar if you're not a Diabetic
  • 1/4 cup butter or margarine
  • 1-1/2 tsp. vanilla extract
  • 4 eggs

Directions
  1. Preheat oven to 350º F. Grease 9" pie plate.
  2. Stir all ingredients until blended. Pour into pie plate.
  3. Bake 50 to 55 minutes or until golden brown and knife inserted in the center
  4. comes out clean. Cover and refrigerate any remaining pie.
  5. Makes:8 servings.
  6. Nutrition Information:
  7. Per serving = Calories 270 (Calories from Fat 125 ), Total Fat 14 g (Sat Fat 6 g),
  8. Cholesterol 110 mg, Sodium 270 mg, Total Carbs 31 g (Dietary Fiber 1 g), Protein 6 g.
  9. Diabetic Exchanges: 2 Starch, 2-1/2 Fat.

I've always heard this pie is so simple but really good. My neighbor makes it all the time, she was just talking about how the crust knows just where to go everytime she makes it. LOL Guess I'll have to give it a try :)

I've been MIA for a few days, thanks for this posting!! My grandmother makes the best coconut cake, just melts in your mouth, being diabetic as well though, I couldn't eat that much, this sounds wonderful!! I've been doing the Splenda for awhile now but never even thought about coconut....don't know why, but thanks again!!!


I am looking at older recipes, this looks so good, I am bookmarking. When will I ever have time to make all these?

Actually it is just 'Bisquick', I really thought it was all over the world.. We use Bisquick for biscuits, pancakes etc.. just a great shortcut mix for baking goodies... happy cooking..


Great and easy, with 6g of protein will be great for breakfast as well. I used original bisquick but wonder if you can use the reduced fat bisquick.
