This is a great dish to be made in Texas in the summer, because you don't have to turn the stove on!!!

Ingredients
- 2 cans blackeyed peas (drained)
- 1/2 cup vegetable oil
- 1/2 cup cider vinegar
- 1/2 cup sugar
- 1/2 cup sliced purple onion
- 1/2 cup red bell pepper (diced)
- 1/2 tsp dry mustard
- 1/2 tsp hot sauce
Directions
- Mix together, Cover and chill. Garnish with sliced tomatoes if desired.
