Yellow Black Red And Green Recipe
It's been around, but there's a twist to this one! The addition of lime. This will "cool" down a spicy hot main dish in a hurry, and serves as a salad, dip, and vegetable. You get 3 in 1!

Ingredients
  • YELLOW: 4 cans shoepeg corn, drained
  • BLACK: 2 cans favorite black beans, rinsed and drained
  • RED: 1 cup salsa or more, your favorite is this best
  • GREEN: 1/2 or 1 lime squeezed, juice and zest, you be the judge
  • GREEN: 1/2 or 1 bunch of green onions, you be the judge
  • GREEN: Cilantro, you be the judge
  • Fresh garlic, you be the judge
  • Cumin, maybe, if you like it

Directions
  1. Place all the YELLOW, BLACK, and RED in a bowl
  2. Place all the GREEN in the bowl
  3. Add the garlic and the cumin
  4. Mix ever so gently, and watch all those beautiful colors blend
  5. You will feel like an artist.
  6. Now, let the people be the judge!
  7. NOTE: Can be refrigerated, or serve immediately. You be the judge!When I serve this, I sometimes have a small bowl of sour cream nearby. Just a dollop takes this into a whole new territory!
