Ingredients
  • 1 package (5.1 ounces) instant vanilla pudding mix
  • 1-1/2 cups cold milk
  • 1 carton (8 ounces) frozen whipped topping, thawed,divided
  • 3/4 to 1 cup flaked coconut,toasted,divided
  • 1 pastry shell,baked or graham cracker crust ( 8 or 9 inches)

Directions
  1. In a mixing bowl, beat pudding and milk on low speed for 2 minutes. Fold in half of the whipped topping and 1/2 to 3/4 cup of coconut.
  2. Pour into crust.
  3. Spread with remaining whipped topping.
  4. Sprinkle with coconut.
  5. Chill
  6. Yield: 6-8 servings ( or 1 whole pie for yourself)

I just made this. I added all the coconut to the pie and didn't put the Cool Whip on top. It's already so rich and creamy that and I just didn't want to add to it. But I still have 1/2 the Cool Whip left so if anyone wants to add their own they have that option.

Hi Preheat oven to 325 F. Place sweetened, flaked coconut (thin layer) onto a cookie sheet. Bake until crispy & golden brown around edges.BE-- CAREFUL--this doesn't take long!!Stir 2 to 3 times. Remove and flip over as you stir it. Remove immediately to a cold plate (for those who e-mailed me about toasting coconut)


This recipe is unbelievable. You will gain 5-10 pounds as it's addictive. I used to make it alllll the time! haha ...yummmm
