Ingredients
  • 1 2/3 cup evaporated milk
  • 1 1/3 cup grated cheddar cheese
  • 1 pound can of tomatoes
  • 1 tablespoon parsley flakes
  • 1/2 medium onion, minced
  • 1/4 cup melted butter
  • 1 2/3 cup Minute rice, uncooked
  • dash cayenne pepper
  • dash, oregano
  • 1 teaspoon salt
  • 1/4 cup grated parmesan cheese (the real stuff)

Directions
  1. Heat milk, butter, and cheddar cheese until cheese is melted.
  2. Place layer of rice, tomatoes, seasonings, onion, and cheese sauce in casserole; repeat layers.
  3. Top with parmesan cheese.
  4. Bake at 350 degrees for 45 to 50 minutes.

Sounds yummy, but two questions ... what is "pet" milk ~ do you mean canned evaporated milk? Also, if the recipe is cooking that long, wouldn't it better to use regular long-grain rice rather than Minute Rice? Just wondering ... thanks!
