This cake is very different to the usual pound cake recipes. It calls for rosewater, which you can find in Middle Eastern grocery stores (if not your regular grocery). You could also substitute orange flower water for the rosewater if desired.

  • 2/3 cup butter, softened
  • ½ cup applesauce
  • 1 cup white sugar
  • 5 eggs
  • 1 cup flour
  • 1 cup chickpea flour
  • ½ teaspoon salt
  • 1 teaspoon almond extract
  • 2 tbsp finely chopped almonds
  • 1 teaspoon rosewater
  • 2 drops red food coloring

Directions
  1. Preheat oven to 350 degrees F. Grease one 9 inch tube pan.
  2. Cream butter and applesauce well.
  3. In a separate bowl beat sugar and eggs together until doubled in volume.
  4. Add sifted flours and salt gradually.
  5. Fold in butter and applesauce thoroughly.
  6. Divide batter into two equal parts.
  7. Add the almond extract and almonds to one half.
  8. To the second half, add the rosewater and the red food coloring.
  9. Spoon batters alternately into the prepared pan. Swirl lightly with a knife.
  10. Bake 50 minutes. Let cake cool before removing from pan.

This looks neat...I'm trying to remember which store I saw the rosewater in. Chickpea flour? Health food store!


This sounds so lovely - I am a huge fan of rosewater in cooking so this is perfect for me. Can I substitute the chickpea flour or should I venture out into the world and track it down?


Another interesting one, jo_jo_ba! I will find some chickpea flour and give these a try - they sounds delicious.


You can substitute the chickpea flour for regular or soy flour even, but the chickpeas add a nice nuttiness to the cake.
