Ingredients
  • 1 small white onion, diced
  • 1 cup crushed pineapple with juice
  • ½ cup fat-free beef broth
  • 2 tsp dry ginger
  • ¼ cup spicy BBQ sauce
  • 1 tbsp liquid honey
  • 1 tbsp Dijon mustard
  • 2 tsp ground black pepper
  • ½ tsp salt
  • 2 large sweet potatoes, scrubbed and shredded
  • 1 lb flank steak, well trimmed

Directions
  1. Mix all ingredients but sweet potatoes and steak in a bowl until well blended.
  2. Place the sweet potatoes in the bottom of a slow-cooker. Top with the flank steak.
  3. Pour sauce over the top of the steak and potatoes.
  4. Cover and cook on High 6-7 hours.
  5. Shred steak with two forks and serve overtop wilted beet greens or spinach.
