Slow-cooker Meatloaf With Shiitake Mushrooms Recipe
Because no evaporation takes place, the crockpot makes an especially moist and tender meatloaf. The mushrooms add moisture as well. Taken from Cooking Light 2004.

Ingredients
  • 2 (1oz) slices whole weat bread
  • 3/4# ground round
  • 3/4# ground turkey
  • 1 1/2c shiitake mushrooms, sliced
  • 1/2c fresh onion, grated
  • 1t Italian seasoning, dried
  • 3/4t salt
  • 2 large eggs, lightly beaten
  • 1 garlic clove, minced
  • 2T catsup
  • 1 1/2t dijon mustard
  • 1/8t ground red pepper

Directions
  1. Place bread in a food processor, and pulse 10 times or until crumbs measure 1 1/3 cups. Combine crumbs, beef, and next 7 ingredients into a large bowl, and shape meat mixture into a 9 x 6" loaf. Place loaf in an electric slow cooker.
  2. Combine catsup, mustard, and pepper in a small bowl, stirring with a fork. Spread catsup mixture evenly over top of loaf. Cover with lid; cook on LOW 5 hours.
  3. Serving size: 4 ounces; 265 calories, 43% from fat.

Fat content is a little on the high side but the calories are low.


This sounds extremely good to me, and I love my slow cooker, meatloaf and mushrooms. Definitely going to be making this really soon.

Alterations


I use ground Bison instead of the ground round. The Bison seems to have more texture, more firmness to the bite. I use Bison for my hamburgers too. Unfortunately my source has moved out of town.
