This is a wonderfully tart lemon poppy-seed cake that has the added benefit of being mixed in the pan it’s baked in. No messy bowls to wash!

Ingredients
  • 1 cup flour
  • ¾ cups whole wheat flour
  • 2/3 cup sugar
  • 2 tbsp poppy seeds
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ cup water
  • 2 tbsp olive oil
  • 2 tbsp grated lemon peel
  • 3 tbsp lemon juice

Directions
  1. Heat oven to 350F.
  2. Mix flours, sugar, poppy seeds, soda and salt in an un-greased 8” square pan.
  3. Stir in remaining ingredients.
  4. Bake 40 minutes.
  5. Cool in pan 10 minutes, un-mould onto wire rack and cool completely.

Alterations


Okay, this is what I've been looking for. Everyone else's always calls for box cake mix & I hate that. The only thing I will change is I'm using white flour as my husband doesn't cake for whole wheat. Will bake today and let you know how it comes out. Phyllis
