My old boss shared this with me, a recipe his French mother would make on special occasions. He called it his romantic dinner for 2. It does take time and you must watch it closely.

Ingredients
  • 2 deboned, skinned chicken breast
  • 1 to 1 1/2 cups heavy cream
  • 1 to 1 1/2 cups white wine
  • pinch white pepper
  • 1 teaspoon tarragon
  • 1 to 1 1/2 cups seedless white grapes

Directions
  1. Spray pan with cooking spray.
  2. Pour the wine in to cover chicken in skillet.
  3. Cook chicken about 10 minutes in wine on medium heat..
  4. Wine should evaporate to about half during this process.
  5. Once chicken jucies are clear when meat is pierced, add cream.
  6. Cook until wine and cream sauce until it reduces to about half.
  7. Sauce will coat chicken.
  8. Stir in seasoning. (Salt optional)
  9. Add grapes and stir to coat with sauce and to heat for 5 minutes.
  10. Serve with rice or mashed potatoes.
