Blueberry Lemon Scones

- 2 cups flour shopping list
- 4 tbls. sugar shopping list
- 1 tbls. baking powder shopping list
- 3/4 tsp. salt shopping list
- 3/4 stick unsalted butter shopping list
- Zest from 1 lemon shopping list
- 2 cups blueberries shopping list
- 1/3 cup heavy cream shopping list
- 2 eggs shopping list
How to make it
- Mix flour, sugar, baking powder, and salt
- Cut up butter into small pieces and mix into dry ingredients
- Add blueberries and lemon zest
- Lightly beat eggs and cream
- Add egg/cream mixture
- Gently mix until everything is moist (try not to break too many blueberries)
- Form a large square with the dough and cut into triangles. (The number will vary depending on how big your square is. I usually get 9.)
- Put triangles on a baking sheet lined with parchment paper
- Brush triangles with more cream and sprinkle sugar on top (Optional)
- Bake for 20 minutes at 400F (until slightly brown)
