How to make it

  • Mix flour, sugar, baking powder, and salt
  • Cut up butter into small pieces and mix into dry ingredients
  • Add blueberries and lemon zest
  • Lightly beat eggs and cream
  • Add egg/cream mixture
  • Gently mix until everything is moist (try not to break too many blueberries)
  • Form a large square with the dough and cut into triangles. (The number will vary depending on how big your square is. I usually get 9.)
  • Put triangles on a baking sheet lined with parchment paper
  • Brush triangles with more cream and sprinkle sugar on top (Optional)
  • Bake for 20 minutes at 400F (until slightly brown)
