Greek Style Beef Casserole

- 1 lb. lean ground beef shopping list
- 1 / 2 cup chopped onion shopping list
- 1/2 cup green pepper shopping list
- 2 tsp. minced garlic shopping list
- 1 (8 oz.) can tomatoe sauce shopping list
- 1 cup beef broth shopping list
- 1 tsp each; salt, marjoram shopping list
- 1/2 tsp rosemary shopping list
- 1/4 tsp.pepper shopping list
- 1 eggplant diced shopping list
- 2 cups cooked rice shopping list
- 4 oz. mozzerella, sliced shopping list
How to make it
- Cook beef, onion, green pepper and garlic in Dutch oven,stirring often until meat just loses its pink color. Stir in tomatoe sauce, broth,salt, marjoram,rosemary,pepper and eggplant.
- Simmer 10 min.
- Stir in rice.
- Pour into an ungreased deep 2-quart baking dish.
- Top with cheese
- Bake 15-20 min. until cheese is melted and lightly brown.
- Serves 6

Cheriehannah, We recently tried this out and it was super. I have to admit that we substituted zucchini for the eggplant. We have lots of zucchini. Thanks for a dish full of goodies and taste. Great job.
