Pumpkin Maple Cream Cheese Muffins

- 2 tsp. maple flavouring shopping list
- 4 oz. cream cheese, softened shopping list
- 2 T. packed brown sugar shopping list
- 1 ½ tsp. maple flavouring shopping list
- 2 c. flour shopping list
- ½ c. brown sugar, packed shopping list
- 2 tsp. baking powder shopping list
- 1 tsp. cinnamon shopping list
- ½ tsp. baking soda shopping list
- 2 eggs shopping list
- 1 ¼ c. canned pumpkin shopping list
- ¾ c. milk shopping list
- 1 tsp. vegetable oil shopping list
How to make it
- Preheat oven to 400.
- Beat cream cheese, brown sugar and maple flavouring in a bowl until smooth and creamy.
- Combine dry ingredients thoroughly.
- Separately mix remaining ingredients until well blended.
- Add to flour mixture until just blended.
- Divide ¾ of the batter amongst 12 greased muffin cups.
- Drop 1 teaspoon of cream cheese filling into center of each cup, pressing down slightly into batter.
- Top with remaining batter.
- Bake for 20-25 minutes.

Really yummy recipe but next time I'm going to add 1/2 tsp. of salt. The flavour is lovely but is just lacking that one little thing. The maple cream cheese elevates this recipe in to a special one. More in IMI11
