Good as a dip for vegetables or used as a salad dressing in a pinch. It is a whiz to fix in a bullet blender. I like to use lowfat sour cream and low fat mayo.

Ingredients
  • 1/2 cup lowfat mayonnaise
  • 1/2 cup of lowfat sour cream
  • 1 1/2 teaspoons of lemon juice
  • 1/2 teaspoons of dry mustard
  • 1 1/2 teaspoons of chopped chives, fresh
  • 1 unpeeled cucumber, split in half, seeds scooped out and cut in chunks, scrub well to get off the waxy stuff

Directions
  1. Put in blender cup, cucumber first and all else dumped on top.
  2. process in spurts until blended. Chill and eat.
