Cucumber Sauce Recipe

Good as a dip for vegetables or used as a salad dressing in a pinch. It is a whiz to fix in a bullet blender. I like to use lowfat sour cream and low fat mayo.

Ingredients
- 1/2 cup lowfat mayonnaise
- 1/2 cup of lowfat sour cream
- 1 1/2 teaspoons of lemon juice
- 1/2 teaspoons of dry mustard
- 1 1/2 teaspoons of chopped chives, fresh
- 1 unpeeled cucumber, split in half, seeds scooped out and cut in chunks, scrub well to get off the waxy stuff
Directions
- Put in blender cup, cucumber first and all else dumped on top.
- process in spurts until blended. Chill and eat.
