Ingredients

How to make it

  • Cook pasta according to package directions.
  • Drain and cool.
  • In small mixing bowl whisk together oil, vinegar, mustard, salt and pepper.
  • In a large mixing bowl combine pasta, basil and tomatoes.
  • Pour vinaigrette over top and toss together.
  • Cover and chill at least 1 hour.
  • Add pine nuts and cheese just before serving.

    I was a little skeptical of a pasta salad recipe that called for vegetable oil instead of olive oil...I mean, aren't we going for the Italian taste here??...but I tried it anyways because I liked that it called for balsamic instead of red wine vinegar. (Of course, I used olive oil and not vegetable!) The thing that makes this dressing pop is the dijon mustard. It gives a creaminess to it. Instead of shredded, I added fresh mozzarella and let it marinate in some reserved dressing before adding it the pasta. Of course, I doubled the garlic and put in a shake or two of red pepper flakes to kick it up. Pine nuts add a nice flavor of sweetness. Yum-a keeper for sure!

    Definitely NOT your typical pasta salad, and I LIKE that. I used multi-grain macaroni and added crisp-steamed diced zucchini, 1 can drained cannellini beans, and black olives just because I can never seem to leave a recipe alone. (That's what my husband says, anyway). The marinade/dressing is fantastic and almost better the next day. And the pinenuts, though somewhat pricey, add a gourmet touch. Thanks for such a great recipe.
