A confection that is good for weddings, celebrations, and holidays. Look like tiny Irish potatoes when made.

Ingredients
  • 1/3 c butter
  • 1/3 c white karo syrup
  • ½ t salt
  • 1 t vanilla
  • 1 lb powdered sugar
  • 4 oz mound coconut
  • cinnamon

Directions
  1. Sift sugar.
  2. Using ½ of the sugar, add all other ingredients and knead until mixed well.
  3. Add the remaining sugar and mix again.
  4. Chill for one hour.
  5. Shape into balls
  6. Roll in cinnamon.
  7. Looks like little white potatoes when complete.

Sounds really good but a very surprising name considering there are no potatoes in the recipe at all. :o)
