Ingredients
  • 2-1/2 pounds yukon gold baking potatoes peeled and cut into 1-1/2” chunks
  • 3 tablespoons softened butter
  • 1 cup shredded smoked gouda cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded swiss cheese
  • 1/2 cup warm milk
  • 4 slices bacon cooked until crisp and chopped
  • 2 tablespoons chopped fresh sage
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Additional shredded cheese for sprinkling on top

Directions
  1. Cook potatoes in large pot of boiling water until very tender.
  2. Drain in colander.
  3. Return potatoes to pot and mash with potato masher.
  4. Stir in butter and cheese until combined.
  5. Add milk to make a creamy consistency.
  6. Stir in bacon and sage.
  7. Season with salt and pepper.
  8. Place in serving bowl and sprinkle with additional cheese.

Ah, we enjoyed this! My husband has complimented me on it several times already. I served it with Chefjeb's meatloaf, and my father-in-law said it hit the spot - great praise!


Bacon, sage and potatoes, what not to love!! Nice post. Great with the 40 clove roast chicken. Really nice flavor to stand up to the roasted garlic.
