Bumblebees Special Chocolate Cupcakes

- 1 1/3 cup semisweet chocolate morsels – Nestle’s are gluten free shopping list
- 1/3 cup unsalted butter, cut into pieces shopping list
- ½ cup prune or apple butter shopping list
- Six large eggs, separated shopping list
- 1/3 cup sugar, divided shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- Heat oven to 350-degrees. Grease muffin cups with cooking spray.
- Stir chocolate and butter in heavy saucepan over low heat until smooth.
- Remove from heat, stir in prune butter. Cool to lukewarm.
- In large bowl, with electric mixer on high, mix egg yolks and ¼ cup sugar until very thick and pale, about three minutes.
- Fold in chocolate mixture and vanilla.
- Using clean, dry beaters, beat egg whites and remaining sugar in bowl until stiff but not dry, about two minutes.
- Fold egg-white mixture into chocolate mixture until just combined.
- Bake 28-30 minutes. Cool completely.
