Here is a chicken recipe that also includes a unique stuffing. When I found this recipe, I thought is was perfect for people like me who just aren't sure to tell when the bird is cooked but not dried out. Give this a try.

Ingredients
  • 6 lb. roasting chicken
  • 1 cup of melted butter
  • 1 cup stuffing mix-Pepperidge Farm is good
  • 1 cup uncooked popcorn (Orville Redenbacher's LOW FAT)
  • Salt and Pepper

Directions
  1. Preheat oven to 350 degrees.
  2. Brush chicken well with melted butter, salt and pepper.
  3. Fill Cavity with Stuffing and popcorn.
  4. Place in pan with the neck end toward the back of the oven.
  5. Listen for the popping sounds.
  6. When the chicken's rear blows the oven door open and the chicken flies across the room, it's done.

Thanks, peeps! My mom laughs too because she thinks the one cup of butter and the lowfat popcorn is the perfect foil for each other. Gotta love those moms.
