This recipe appeared in "Cooking Light" magazine. This is a non-tradational way to prepare eggplant, but it really cuts the calories.
I love that it isn't greasy fried mushy stuff!

Thanks for the post! There is nothing better than a Maine lobster...originally from the east and have depleted the lobster population many times.
