How to make it

  • Cook potatoes in jackets until tender. Peel. Shred into large bowl. Stir in sour cream, 1 cup cheese, onion, salt, pepper & milk. Turn into 2 quart buttered casserole & top with remaining cheese. Sprinkle with paprika. Cover & refrigerate several hours or overnight. Bake, uncovered, @ 350 for 30-40 min.

    sounds like a fab make-ahead. i too am caring about the weight thing..everything in moderation.of course just because i'm watching my weight does't mean my whole family has to suffer. this will be perfect when i have 15 to 20 people here, i'll make several a day ahead and breeze thru the rest of the food. thanks i'll have a good foundation to start on. tina d

    I was reading this recipe and the comment of carole and i realized that you can go to an organic store and you can get just about every ingredint there and cut the calories way down, that way you could make it just about anytime and enjoy without the worry of too many calories. Just a helpful hint, We have that same problem at our house thats why i spend the extra bucks to buy organic food.

    These were a big hit with my company, last night. However, because of all the calories and fat, I'm going to save this recipe for extra-special occasions! Will definitely make them again--my husband adored them. He's looking forward to having the leftovers tonight.
