Featured at a Designer House luncheon! Chicken is marinated in Italian dressing, than combined with a wonderful dressing. Marinating makes the difference in this one!

Ingredients
  • 4 cups diced, cooked chicken (poach chicken breasts)
  • Marinate overnight in Italian salad dressing, drain and gently tear in medium pieces
  • 1/4 cup chopped celery
  • 2 tablespoons green onions, chopped
  • 1/3 cup raisins
  • 1/3 cup slivered toasted almonds
  • DRESSING
  • 2/3 cups mayonnaise
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon curry powder, OR to taste
  • 1/8 teaspoon salt

Directions
  1. In large bowl, place drained, torn chicken, green onions, raisins, toasted almonds
  2. Combine dressing ingredients in medium bowl
  3. Combine dressing with chicken mixture
  4. Serve as a sandwich or as a salad
  5. This is delicious!
  6. NOTE: Marinating the chicken adds a dimension to the salad
