Glazed Pork Chop Casserole Recipe
This is another recipe obtained from my catering friend. He makes these often for special events and his family and friends. These are very tasty and great along side Garlic Mashed Potatoes and a Salad.

Ingredients
  • 6 lean pork chops, 1 inch thick, trimmed well
  • 1 lg. onion, sliced thin
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. chicken broth (or 1 env. Instant chicken broth, or 1 chicken bouillon cube)
  • 2 tsp. prepared mustard (I use dark or Grey Poupon)
  • 1/4 c. water and some juice from chops

Directions
  1. Brown chops in large frying pan.
  2. Place onion slices on bottom of shallow baking pan.
  3. Top with browned pork chops.
  4. Sprinkle with salt and pepper.
  5. Combine chicken broth, mustard, water and pork chop juice in a cup and pour over chops.
  6. Cover.
  7. Bake at 350 for 45 minutes.
  8. Place a pork chop on plate on top of onions and spoon glaze over.

The cooking instructions and ingredients were spot on. I used a sweet onion and I'm not sure which I liked better; the totally tender pork chops or the savory onions.

As with most things that are simple it was perfect. Its a pretty dish that I would be pleased to serve to guests. I fixed it up earlier in the day and had it ready to pop in the oven that night. Takes no time to toss together and is a very inexpensive dish that dresses up very nicely.
