Tortilla Bake

- 1-1/2 pound lean ground beef shopping list
- 12 soft flour tortillas shopping list
- 2 cups ricotta cheese shopping list
- 1 cup grated monterey jack cheese shopping list
- 2 cups salsa; mild, medium or hot shopping list
- 2 cups shredded lettuce shopping list
- 1 cup chopped tomatoes shopping list
- 1 cup shredded cheddar cheese shopping list
- 1 egg, beaten shopping list
- 1 medium onion, diced shopping list
- 3/4 cup sliced black olives shopping list
How to make it
- In a skillet, brown ground beef.
- Drain.
- Add onions and salsa and mix well.
- Heat just another 1-2 minutes and remove from heat.
- Cover bottom and sides of a 13x9X2-inch baking dish with non-stick cooking spray.
- Line bottom and sides of dish with flour tortillas.
- Pour beef mixture into dish.
- Place a layer of flour tortillas on top of beef mixture.
- In a bowl, combine ricotta cheese, monterey jack cheese and egg.
- Mix until well blended.
- Pour over tortillas.
- Bake at 350° for 30 minutes.
- Remove from oven.
- Sprinkle with Cheddar cheese, lettuce, tomatoes and olives.
- Serve.
