Tortilla Bake Recipe
This is almost like a lasagna using tortillas. It's really easy to put together and not as messy as traditional tacos!

Ingredients
  • 1-1/2 pound lean ground beef
  • 12 soft flour tortillas
  • 2 cups ricotta cheese
  • 1 cup grated monterey jack cheese
  • 2 cups salsa; mild, medium or hot
  • 2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • 1 cup shredded cheddar cheese
  • 1 egg, beaten
  • 1 medium onion, diced
  • 3/4 cup sliced black olives

Directions
  1. In a skillet, brown ground beef.
  2. Drain.
  3. Add onions and salsa and mix well.
  4. Heat just another 1-2 minutes and remove from heat.
  5. Cover bottom and sides of a 13x9X2-inch baking dish with non-stick cooking spray.
  6. Line bottom and sides of dish with flour tortillas.
  7. Pour beef mixture into dish.
  8. Place a layer of flour tortillas on top of beef mixture.
  9. In a bowl, combine ricotta cheese, monterey jack cheese and egg.
  10. Mix until well blended.
  11. Pour over tortillas.
  12. Bake at 350° for 30 minutes.
  13. Remove from oven.
  14. Sprinkle with Cheddar cheese, lettuce, tomatoes and olives.
  15. Serve.
