How to make it

  • In a shallow pan heat olive oil and add garlic, leeks and onions till transparent. Do not brown. Add chopped carrots, beans and cabbage. Bring to a boil and then add the white beans.
  • Let simmer for 20 minutes or until veggies are tender but firm. Test salt.
  • Add spinach and paprikas. Mix well. Boil 5 more minutes. Set aside.
  • Serve the soup in bowls, adding fresh parsley and a little olive oil on top.

    Good Morning again Immaculada and gracias por tus receta! This soup looks very similar to one I prepare. My husband and I enjoy it during the cold winter months here in Canada. I usually add potatoes to my soup but I have never added spinach. Next time I prepare it, in goes the spinach!!! Thank you ;-)
