Autumn White And Green Bean Soup

- 4 Tbsp olive oil shopping list
- 2 garlic cloves shopping list
- 2 leeks shopping list
- 2 green onions shopping list
- 3 carrots shopping list
- 1/2 pound green beans shopping list
- 1 pound cabbage shopping list
- 1 can white beans shopping list
- 2 cups vegetal broth shopping list
- 1/2 pound fresh spinach leaves shopping list
- 1 tsp sweet paprika shopping list
- 1 tsp hot paprika shopping list
- 2 Tbsp fresh parsley shopping list
- olive oil for drizzle shopping list
How to make it
- In a shallow pan heat olive oil and add garlic, leeks and onions till transparent. Do not brown. Add chopped carrots, beans and cabbage. Bring to a boil and then add the white beans.
- Let simmer for 20 minutes or until veggies are tender but firm. Test salt.
- Add spinach and paprikas. Mix well. Boil 5 more minutes. Set aside.
- Serve the soup in bowls, adding fresh parsley and a little olive oil on top.
