Fall Pumpkin Cake Recipe
This cake is a wonderful cake to have during the harvest season. I like it because its easy to make and the kids love it.

Ingredients
  • 4 eggs
  • 1 2/3 c sugar
  • 1 c. oil
  • 1 (16 oz) can pumpkin or 2 cups
  • 2 c flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1tsp. soda
  • 2 tsp. cinnamon
  • Frosting:
  • 1 (3oz.) cream cheese, softened
  • 1/2 c. margarine
  • 1 tsp. vanilla
  • 2 c powdered sugar

Directions
  1. Beat eggs, then slowly add sugar.
  2. Add the pumpkin and oil; beat until fluffy.
  3. Stir sifted ingredients into the pumpkin mixture and mix well.
  4. Pour into ungreased 10x15 inch pan.
  5. Bake at 350* for 30 to 35 minutes
  6. Frosting: Blend cream cheese, margarine, vanilla, and powdered sugar,
  7. Frost cool cake.

I love pumpkin in baked goods. I don't have a 10x15" pan, but do you think a 9x13" would work as well, maybe just bake it longer? This sounds really yummy!
