Golden Apple Mincemeat Cake Oh Yeah

- 3 cups flour shopping list
- 4 teaspoons baking powder shopping list
- 1 teaspoon EACH ground allspice and cinnamon shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 cups vegetable oil shopping list
- 1-1/2 cups brown sugar shopping list
- 2 cups grated golden delicious apples shopping list
- 1 cup prepared mincemeat shopping list
- 1/2 cup chopped pecans shopping list
- 1-1/2 teaspoons vanilla shopping list
- 3 eggs shopping list
- 1-2 tablespoons sifted powdered sugar to sprinkle on cooled cake, if desired shopping list
How to make it
- Preheat oven to 350 degrees
- Combine flour, baking powder, allspice, cinnamon and salt in large bowl, set aside
- In large bowl of electric mixer, combine oil and brown sugar; beat well
- Add half the flour mixture; mix well
- Blend in grated apples, mincemeat, pecans and vanilla
- Add remaining flour mixture
- Add eggs, 1 at a time, beat well after each addition
- Turn into a greased 10 inch Bundt pan
- Bake 1 hour OR until toothpick inserted near center comes out clean
- Cool in pan 15 minutes
- Turn out onto wire rack
- When cool, sprinkle with powdered sugar
- NOTE: may serve with whipped cream or HARD SAUCE
- HARD SAUCE
- Beat 1/2 cup unsalted butter and 1/8 teaspoon salt until light and fluffy. Gradually beat in 1 cup powdered sugar. Stir in Rum or rum flavoring to taste. Refrigerate 1 hour.
