How to make it

  • Preheat oven to 350 degrees
  • Combine flour, baking powder, allspice, cinnamon and salt in large bowl, set aside
  • In large bowl of electric mixer, combine oil and brown sugar; beat well
  • Add half the flour mixture; mix well
  • Blend in grated apples, mincemeat, pecans and vanilla
  • Add remaining flour mixture
  • Add eggs, 1 at a time, beat well after each addition
  • Turn into a greased 10 inch Bundt pan
  • Bake 1 hour OR until toothpick inserted near center comes out clean
  • Cool in pan 15 minutes
  • Turn out onto wire rack
  • When cool, sprinkle with powdered sugar
  • NOTE: may serve with whipped cream or HARD SAUCE
  • Beat 1/2 cup unsalted butter and 1/8 teaspoon salt until light and fluffy. Gradually beat in 1 cup powdered sugar. Stir in Rum or rum flavoring to taste. Refrigerate 1 hour.
