Golden Apple Mincemeat Cake Oh Yeah Recipe

Ingredients

3 cups flour

4 teaspoons baking powder

1 teaspoon EACH ground allspice and cinnamon

1/2 teaspoon salt

1-1/2 cups vegetable oil

1-1/2 cups brown sugar

2 cups grated Golden Delicious apples

1 cup prepared mincemeat

1/2 cup chopped pecans

1-1/2 teaspoons vanilla

3 eggs

1-2 tablespoons sifted powdered sugar to sprinkle on cooled cake, if desired

Directions

Preheat oven to 350 degrees

Combine flour, baking powder, allspice, cinnamon and salt in large bowl, set aside

In large bowl of electric mixer, combine oil and brown sugar; beat well

Add half the flour mixture; mix well

Blend in grated apples, mincemeat, pecans and vanilla

Add remaining flour mixture

Add eggs, 1 at a time, beat well after each addition

Turn into a greased 10 inch Bundt pan

Bake 1 hour OR until toothpick inserted near center comes out clean

Cool in pan 15 minutes

Turn out onto wire rack

When cool, sprinkle with powdered sugar

NOTE: may serve with whipped cream or HARD SAUCE

HARD SAUCE

Beat 1/2 cup unsalted butter and 1/8 teaspoon salt until light and fluffy. Gradually beat in 1 cup powdered sugar. Stir in Rum or rum flavoring to taste. Refrigerate 1 hour.
