  • Substitute for buttermilk:
  • 1 cup milk, 1 tbsp. lemon juice, stir, let sit for 10 minutes.
  • Mel's notes: Like any muffin batter, don't overbeat it or the muffins will be tough. I make a bit more filling as we like them gooey.

Now I was just wondering if you could use regular milk instead of buttermilk? I don't use buttermilk all that often in recipes to keep it in the house. It goes bad before I find something else that intrigues me.

I did try thiem - wow! You weren't kidding and they were all gobbled up in a flash. I'd love to share with my blog readers. Can I copy the recipe and of course give you all the credit?

In the meantime I'll try to link to here...not sure it will work without them being members.
