Sweet N Sour Chicken Balls Recipe
A favourite with kids (and grandkids!) as well as adults. Easily doubled or more for a crowd ~ serve over hot fluffy rice. (See note at end; also good made with ground pork.)

Ingredients
  • Meatballs:
  • 1lb ground chicken
  • 1 egg
  • 1/2 cup panko (Japanese bread crumbs) or dried regular bread crumbs
  • 1 Tbsp soy sauce
  • 1/2 tsp EACH salt and pepper
  • Sauce:
  • 1 Tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 Tbsp freshly grated ginger root
  • 1 shallot, minced
  • 1 red bell pepper, cut into small chunks
  • 14 oz tin pineapple chunks (with juice)
  • 2 Tbsp soy sauce
  • 1 Tbsp EACH brown sugar and cornstarch
  • 1/4 cup cold water
  • 2 green onions, sliced

Directions
  1. Preheat oven to 350F.
  2. For meatballs, combine chicken thoroughly with egg, panko, soy sauce, salt and pepper. Shape into 20 small balls and place on a baking sheet lined with parchment paper. Bake for 20 minutes or til cooked through.
  3. Meanwhile, heat oil on medium heat in a large, deep skillet. Add garlic and ginger and saute 2 minutes. Add shallots and bell pepper and simmer for about 10 minutes or until tender. Add juice from can of pineapple (reserving fruit on the side), soy sauce and brown sugar. Increase heat and bring to a boil.
  4. Reduce heat down to medium. Add meatballs and pineapple chunks to sauce and heat through for about 5 minutes.
  5. Meanwhile, in a small bowl, combine cornstarch with cold water to make a slurry. Add enough to skillet to thicken the sauce slightly (it will take just a few seconds to thicken so be careful how much of the slurry you add).
  6. Stir in green onions and serve over hot, fluffy rice.
  7. NOTE: Equally good made with ground pork instead of chicken.
