Bananaberry Bomb Muffins

- 1 cup quick rolled oats shopping list
- 1/2 cup whole wheat flour shopping list
- 1/2 cup white flour shopping list
- 1/4 cup wheat germ shopping list
- 1/2 cup sugar shopping list
- 1 1/2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 1/2 cups mashed bananas shopping list
- 2 egg whites shopping list
- 1/4 cup melted butter or margarine shopping list
- 1 cup fresh or frozen fruit shopping list
How to make it
- Preheat oven to 350 degrees
- Combine oats, flour(s),wheat germ, sugar, baking powered, baking soda and salt in a large bowl. Stir well and set aside.
- In a small bowl, whisk together the bananas, egg whites and melted butter until smooth.
- Add banana mixture to the dry ingredienst and mix until just moistened. Gently fold in fruit.
- Spray large muffin tins with non-stick spray.
- Divide batter evenly between 12 muffin cups.
- Bake for 20 minutes are until a toothpick inserted in the middle, comes out clean.
- Let cool on a wire rack.
