Ingredients
  • 3 Pkgs. Whole Gruenkern [can be purchased in any store that imports german products (If you find it diffucult to find let me know and I'll find out for you where you can get it)]
  • 3 knee bones
  • 4 marrow bones
  • 1 pkg. knockwurst [1lb.]
  • 2lbs. cubed meat [on the lean side]
  • 1 lg. Spanish onion
  • Salt
  • Pepper
  • can of Pam
  • 25 qt. pot with cover
  • Plastic containers for storage

Directions
  1. Check the 3 pkgs. of kernels [making sure there are no rocks,rotten kernels etc.] .
  2. Take pot and spray the whole inside generously with pam.
  3. Then pour the kernels into the pot covering the bottom of pot.
  4. Next wash the bones and meat and place into pot.
  5. Then wash of the 4 knockwurst sausages,cut into bite size pieces and throw into pot.
  6. Now peel the outer layer of onion,wash of and place into pot.
  7. Then add a generous amount of salt and pepper too pot and fill the rest of the pot with water leaving about 11/2" space from pot.
  8. Place pot on largest burner,placing cover to pot on the pot ,but leaving a slight opening [so that it wen't overflow.
  9. Cook on a medium to high flame till it comes to a boil [watching it on a regular basis that it doesn'i over flow - acout 1/2hr.]
  10. When it comes to a boil lower the flame so that the soup simmers for 4-5hrs.
  11. check the soup about every 1/2hr. to 1hr. and stir the bottom that it won't stick and burn.
  12. After about three hours taste the soup and if cit spicy enough add pepper and salt too taste.
  13. One can eat as soon as finished or you may want too put in frig. for a day [24-36hrs.] let it cool and take what ever fat is on top of and rewarm.
  14. If the soup is too thick after fridg. just add water and spice to taste rewarm and it will be really good.
  15. This soup can be frozen and rewarmed.

Where did you get the Gruenkern from?


Wheat kernels can also be purchased at many health food stores. I think I'll have a lot of trouble finding the knee bones, but I really want to try this dish so I think I'll improvise with ox tails..what do you think? It sound SO rich and delicious!
