Miso Stir Fry Recipe
This is a stir fry I came up with to use some leftover Korean Marinated Flank steak, but you could use chicken, shrimp, tofu or whatever you like!

Ingredients
  • 6 ounces thinly sliced beef, chicken, shrimp or tofu
  • 2 Tablespoons peanut oil
  • 3 cloves garlic, chopped
  • 1 inch ginger root, chopped
  • 3 Tablespoons red miso
  • 3 Tablespoons soy sauce
  • 1 teaspoon honey
  • 1 broccoli stalk, separated into florets
  • 1 red bell pepper, diced into 1 inch pieces
  • 2 scallions, sliced

Directions
  1. Mix miso, soy sauce and honey in a bowl and set aside.
  2. Heat oil in wok.
  3. Add garlic and ginger and stir fry for a minute or two.
  4. Add vegetables and stir fry for a few minutes until crisp tender.
  5. Add meat or tofu and stir fry until meat is cooked.
  6. Add sauce and heat through.
  7. Serve with rice.

Alterations


I've noticed in my kitchen that if I try to add my vegetables before the meat, they get mushy before the meat is done. However, I like my beef cuts on the thicker side. So if you like thicker slices of meat, I recommend cooking your meat first. :)
